A Salad A Day: Spicy Chickpea Salad

The Oxford English Dictionary defines ‘salad’ as “a cold dish of herbs or vegetables (e.g. lettuce, endive), usually uncooked and chopped up or sliced, to which is often added sliced hard-boiled egg, cold meat, fish, etc., the whole being seasoned with salt, pepper, oil, and vinegar.” These days, however, it seems that people are finding ways to broaden the definition of salad: they can be warm, monochromatic, made from fruit, etc.

Today, I bring to you the chickpea salad. Or side salad. Whatever you want to call it.

This salad is warm without being very dense, and can be paired with grains, greens, or just eaten alone (that’s how I enjoyed it).

Here’s what you need:

1 can of chickpeas, drained and rinsed

1 tbsp tomato paste

1 tbsp grapeseed oil

½ small onion, sliced

½ tsp cayenne pepper

salt to taste

 

1) Place oil and onions in a skillet over medium heat

2) Sauté until tender

3) Add the chickpeas and tomato paste

4) Blend well, adding more oil if necessary

5) Add the cayenne pepper and salt to taste

6) Enjoy!

So simple yet so delicious. Happy eating.
