4th of July Strawberry Shortcake

To celebrate the 4th, try this simple and summery recipe for Strawberry Shortcake. Decorate with blueberries, sliced strawberries, and whipped cream for a patriotic and light dessert.

Ingredients
6 cups sliced strawberries
1/2 cup sugar
2 cups flour
2 tsps baking powder
1/2 cup butter
1 egg
2/3 cup milk
1 cup heavy cream, whipped

Directions
Combine strawberries and half of the sugar and set aside. Stir together the rest of the sugar, the flour, and baking powder. Cut in butter until the mixture resembles crumbs. Combine egg and milk and add to flour. Stir until just moistened. Spoon dough into a greased 8×1 1/2 inch round pan and bake in 450 degree oven for 15 minutes. Cool for 10 minutes and then remove from pan. Cut in half horizontally, and put half of the whipped cream and half of the strawberries on top. Then repeat with the second layer of cake.
