They always say, breakfast is the most important meal of the day. The way you start your day can definitely affect the way the rest of your day pans out. As college students, it’s easy to want to skip breakfast or to grab a sugar-filled breakfast bar that’s supposed to be a “complete meal” before class; we are always rushing. With the arrival of the midterm season, some people out there work hours trying to cram information into their heads on empty stomachs. This past weekend I went to Palm Beach, and every morning, Lu made us an incredible spread of food for breakfast as we sat in the sun listening to the ebb and flow of the ocean waves. It reminded me that sometimes you need to slow down for a little bit, just enough to nourish your body for the feats that it is going to face in the day. Whether it’s sitting in class for two hours, going on a jog, working out at the gym, going to a meeting, creating something, or exploring, your body needs the fuel. So, I urge you to wake up just a little bit early tomorrow and give yourself a breakfast for champions. It will make a world of a difference.
Lu, who used to work at a restaurant for several years, is an incredibly talented chef. He can make anything from a simple salad to an extravagant feast using fresh and healthy ingredients. The first morning, he made the best gluten free waffles I had ever tried! I couldn’t believe how light and fluffy they were. Gluten free goodies can easily become soggy, dry, chalky, or sandy. These waffles, however, were the complete opposite. I would say they were even better than regular wheat waffles! Lu experimented with several gluten free recipes and tweaked them until he created the perfect ratio of flour to eggs to fat. His culinary genius has given us this perfect, airy, delicious gluten free waffle and I couldn’t help but dream about it and I finally asked for his recipe. Lucky for you guys, I am going to share his secret with all of you so you can make it at home and experience a beautiful Palm Beach breakfast right in your own kitchen! Lu’s Gluten Free Waffles
2 cups King Arthur Gluten Free All Purpose Baking Mix
2 tablespoons sugar
1 teaspoon baking soda
2 tablespoons baking powder
3/4 teaspoon salt
2 cups milk
3 egg yolks
3 egg whites
1 tablespoon vanilla extract
1 stick of butter, melted
1. Mix the dry ingredients in a bowl.
2. Add in all the wet ingredients. Mix until combined. Make sure to not over-mix!
3. Beat egg whites until stiff peaks form.
4. Gently fold the egg whites into the batter.
5. Let the batter rest in the fridge for about 30 minutes.
6. Preheat the waffle iron. When it’s ready, pour in the batter and cook until golden brown.
7. Serve with powdered sugar and/or maple syrup. Fresh berries and fruit add a nice touch as well!
