Butternut Squash Soup

As the weather heads towards the freezing side of the spectrum, you can benefit from knowing as many tasty ways to stay warm as possible. This recipe is really easy to make, and it makes enough for at least 3-4 meals. It’s also really good for you, tastes amazing, AND almost makes you feel like you’re finally eating grandma’s food again! And what more can you really want from a cup of soup? So here it is, the almighty Butternut Squash & Spinach Soup:

Ingredients:
– 1 cup of diced and peeled butternut squash
– 2 cups loosely packed baby spinach, hand-torn into smaller parts (Tip: whenever possible, use your hand to chop greens rather than your knife because the metal kills some of the vitamins)
– half an onion, peeled and diced

-1 piece of celery, diced

– 6 oz chicken broth

– Water
– Salt
– 1 cinnamon stick
– Coriander, to taste
– Red chili pepper flakes, to taste
– Crumbled feta cheese, to serve

Directions:
1. Boil about 1-2 cups of water
2. Put in the onion & celery mix when water is boiling, add salt. Cover and wait for about 7-8 minutes, or until the onions start to change color.
3. Add the butternut squash, add water to cover and exceed (a little) the squash
4. Cover, wait approximately 10 minutes. Keep checking the firmness of the squash; keep closed until they start to get soft enough to be broken apart by a wooden spoon.
5. Add the spinach. Add more water if necessary (if most of it is soaked up), and add the chicken broth. Cover and wait.
6. Throw in the cinnamon stick.
7. Let it boil and cook until the spinach become limp and dark green, and until the squash is soft enough to fall apart very easily.
8. Turn off the stove, but keep the pan there. Add a little bit of coriander, and a tiny bit of chili pepper. Mix, and cover.
9. Remove from the stove after 3-4 minutes.
10. Wait until the soup cools down.
11. Either using a hand or regular blender, blend the soup thoroughly until it’s completely runny (no solid pieces).
12. While serving, sprinkle a little bit of crumbled feta cheese on top.
