Coconut Orange Overnight Oats

As part of our latest edition of Bloggers’ Bites, Chelsea shares her favorite summer recipe.
For anyone stuck on a long summer commute to work, any extra minutes of sleep are worth the hassle. For me, this means making breakfast to-go the evening before. My go-to is overnight oats: healthy and tasty. Below is one of my favorite combinations, but feel free to vary up the type of milk and fruit: only the ratio of oats:milk is important.
Coconut Orange Overnight Oats
Ingredients:
1/2 cup old fashioned oats
1/2 cup low fat coconut milk
1 tablespoon chia seeds
1 teaspoon wheat germ
1 tablespoon cinnamon
2 tablespoons fresh OJ
1/2 orange, cut into bite size pieces
Directions:
1. Combine the following ingredients in a reusable Tupperware.
2. Store in the fridge overnight.
3. Grab the Tupperware and a plastic spoon as you’re heading out the door, and you’re good to go.
