Easy Pumpkin Walnut Cookies

Ingredients

  • flour 2 cups
  • baking soda 1 teaspoon
  • baking powder 1 teaspoon
  • cinnamon 2 teaspoons
  • salt a pinch
  • white granulated sugar 3/4 cups
  • brown sugar 1/2 cup
  • butter, softened 1/4 cup
  • pumpkin puree 1 cup
  • egg 1
  • honey 1 teaspoon
  • walnuts, chopped 1 cup
  • cooking spray
  • Directions

    Preheat the oven to 350 degrees Fahrenheit. Prepare a baking sheet with cooking spray.

    Combine flour, baking soda, baking powder, cinnamon, and salt in a medium bowl.

    In a separate bowl, combine the white granulated sugar, brown sugar, and butter.

    Add pumpkin puree, egg, and honey to the sugar mixture and combine.

    Add the flour mixture into the bowl and mix.

    Fold in walnuts.

    Spoon 2-3 tablespoons of dough per cookie (depending on how big you want your cookies to be) onto the prepared baking sheet, about 2 inches apart.

    Bake for 12-15 minutes or until the cookies start to brown.

    Let sit for 2 minutes then transfer to a cooling rack.
