Four Ingredient Berry Parfait

Recipe by Shaila Lothe

Mornings are not my friend. I strive to wake up as late as possible and still arrive to class (reasonably) on time. That’s where these berry parfaits come in.

If you’re looking for the an easy, delicious, and nutritious breakfast, look no further. These parfaits take me a few minutes to make, keep in the fridge for a few days, and help me feel full until lunch. The tangy berries melt perfectly into the rich yogurt. If you’re looking for a tastier version, sub the plain Greek yogurt for sweetened vanilla yogurt and add a few swirls of honey.

My favorite muesli for this recipe is this one but any muesli will do.

Ingredients

  • muesli 1/4 cup
  • 0% Greek Yogurt 1/2 cup
  • frozen mixed berry blend 1/4 cup
  • cinnamon a pinch
  • Directions

    1

Gather your ingredients & find a container for your parfait. I use mason jars, but any container that can hold about a cup will work.

    2

Add yogurt, muesli, cinnamon, and fruit to the container. No need to mix, although it will help the oats soften.

    3

Let it sit for at least 8 hours, preferably overnight.

    4

Enjoy your parfait. It will stay good for 3-4 days in the fridge.
