Ramen Noodle Stir Fry with Chicken and Bok Choy

Spice up your plain old ramen noodles with this much tastier and much healthier recipe!

Ingredients

  • ramen noodles 2 packs (sauce packets discarded)
  • chicken breast 1 pound, sliced
  • bok choy 1 ½ cups, chopped
  • soy sauce 2 tablespoons
  • sweet chili sauce 1 tablespoon (feel free to add more!)
  • garlic 2-3 cloves, roughly chopped
  • green onions 2-3, chopped
  • olive oil for cooking
  • salt to sprinkle on steak

    Boil some water and then add the ramen. Cook until it’s just soft enough to eat. Quickly drain and remove from water.

    Heat some olive oil over medium high heat and add the garlic and white parts of the green onions. Stir fry the chicken over high heat, sprinkling some salt over it, until it’s cooked to your desired level. You can also optionally add a tablespoon of soy sauce to cook the chicken.

    Remove the chicken from heat (it’s fine if there’s leftover oil/ soy sauce!).

    Add the bok choy, the 2 tablespoons of soy sauce, and sweet chili sauce into the same pan.

    Once the bok choy is cooked, stir in the noodles to coat it in the sauce and add the chicken back in too.

    Feel free to add any more soy sauce or chili sauce after tasting it! Garnish with the leftover green onion or some sesame seeds, and serve and enjoy!
