Sweet Potato Casserole

Thanksgiving season is wonderful for many reasons: fall weather, foliage, and, most importantly, FOOD! Since my all-time favorite thanksgiving dish is sweet potato casserole, I wanted to share a 6-step recipe, so you can enjoy thanksgiving all-year round! 

Sweet potato casserole is great to bring to a potluck, a housewarming party, or any larger group gathering. I personally like making a tray and keeping it in the fridge, so that I can microwave portions for myself throughout the week. For any people inexperienced in cooking, this recipe is great because it requires no stove and most of it is basic mixing, and then waiting around. Also, this recipe only has 6 steps. Could it get any easier?

Ingredients

For the top layer
  • butter 1/3 cup
  • brown sugar 1 cup
  • flour 1/3 cup, softened
  • For the bottom layer
  • sweet potato 3 cups
  • butter 1 stick
  • eggs 2
  • white sugar 1 cup
  • vanilla 1 tablespoon (optional)
  • For the topping
  • crushed pecans 1 cup
  • marshmallows, optional
  • Directions

    Boil potatoes in salted water.

    Preheat oven to 350 F.

    Mix the bottom layer ingredients.

    Mix the top layer ingredients.

    Strain the potatoes and mash!

    Layer bottom and top layers in a loaf pan.

    Add pecans and other toppings.

    Bake for approximately 20 to 30 minutes, until top turns brown. Finished!
