Warm Chia Pudding

Ingredients

  • chia seeds 2.5 tbsp
  • vanilla extract 1 tsp
  • water or non-dairy milk 1 cup (makes it creamier), Can add more liquid to loosen it up if needed
  • cinnamon or cocoa powder 1 tsp
  • salt pinch
  • rolled oats 2 tbsp (optional)
  • ground flax ½ tbsp (optional)
  • toppings Sweet (drizzle of honey or maple syrup - totally optional); Fruit (diced apple, sliced banana, frozen berries, shredded carrots, raisins, shredded coconut); Nuts/seeds (walnuts/pecans, sliced almonds, crunchy or creamy nut butter, hemp seeds); for more of a crunch (granola or cereal!) My personal favorite combo: Carrot cake → 1 shredded carrot, shredded coconut, walnuts, and granola!

    In a microwaveable bowl, add the chia seeds, rolled oats, ground flax, cinnamon or cocoa powder, and salt and mix well.

    Pour in the water or milk and vanilla extract.

    Mix thoroughly (preferably with a whisk) to make sure all chia seeds clumps are broken up and are evenly distributed throughout the mixture.

    Microwave for 4 minutes, stopping in the middle to mix the pudding.

    After pudding has thickened and seeds have visibly plumped up, add honey or maple syrup if needed and mix.

    Immediately put desired toppings on top… I recommend nuts/dry toppings first and then fruits on top!
