Month of 1000 Pies: An Interview with Chef Mateo of Red Owl Tavern
Everybody knows that pie is the best part of Thanksgiving. Sure, stuffing is pretty good and sweet potatoes are the bomb, but the one thing that you will always make room for is pie.
Now what if I told you you could eat your pie and feel (morally) good about it too? This month, Red Owl Tavern is having its annual Month of 1000 Pies, in which they strive to sell 1000 pies and for each pie sold, they donate 50% of the profits to Philabundance. In order to find out more about this commendable program, I went to speak to Chef Caitlin Mateo, the new head chef of Red Owl Tavern.
Chef Mateo has an illustrious culinary history, having worked under Marcie Turney and Valerie Safran before becoming the executive chef at Square 1682, and now recently becoming the executive chef of Red Owl Tavern in Old City. Before her culinary career, she was a professional gymnast, and her years as an athlete have led her to have a focus on nutrition in her cooking. She plans to offer lightened up comfort food at Red Owl, with of course an emphasis on deliciousness.
As for the pies, she is excited about being able to be a part of this charitable effort, and tells me that the pies have been selling well. The two types of pie available are classic pumpkin (her favorite) and apple streusel. The pastry staff has been working very hard to have lots of pies on hand for the Thanksgiving rush.
