Dark Chocolate Raspberry Cookies

Recipe by Sharon Dong

If you’re looking to make some cookies, spice up your plain old chocolate chip batter with these delicious dark chocolate raspberry cookies! Feel free to leave out the chips if it’s too much chocolate for you, but make sure you use frozen raspberries, as fresh ones crush too easily!

  • all purpose flour 1 cup
  • cacao powder 1/4 cup
  • baking soda 1/2 teaspoon
  • salt 1/4 teaspoon
  • unsalted butter 1/2 cup, room temperature
  • brown sugar 1/2 cup
  • egg 1
  • vanilla extract 1 teaspoon
  • chocolate chips 1/4 cup
  • frozen raspberries 1/4 cup
  • Directions

    Preheat oven to 350°F.

Combine flour, cacao powder, baking soda and salt.

In a large bowl, mix together the butter and sugar until smooth. Then add in the egg and vanilla extract.

Gradually mix in the dry ingredients until just combined.

Gently stir in the chocolate chips and raspberries.

Scoop out the batter into 12 cookies on a baking pan lined with parchment paper.

Bake for 10-12 minutes or until cookies are set. The raspberries will get burnt if baked for too long!
