Truck Treks: Cucina Zapata
Cucina Zapata is one of the most unique trucks I think I’ve ever eaten from–these awesome people are mixing up Thai food and Mexican food, a combination I wouldn’t think would work so well, let alone would have thought of!
Cucina Zapata creates its tacos with traditional Mexican components but has a flavor base of Thai foods, like their juicy Thai Short Rib tacos and Chicken Satay taco. But then they suddenly smack you in the face with an amazing Cap n’ Crunch Tilapia Burrito on the menu, which is tilapia fried in a coating of ground Captain Crunch cereal (WHAT?!).

Not everything is in a wrap though, and they always have an item for the vegetarians. The relatively small menu will change from day to day but there are always several delicious options.
Don’t forget to order the Thai tea with your meal!
