Damn, More Ham!

Ah, honey-baked ham. The never-ending sweet meat. But, actually, it never ends. So, when you grow weary of the staple ham sandwich, try one (or all–we know you have enough left) of these tasty recipes.

Ham, Cheese, and Tomato Quiche
Adapted from Food.com
Serves: 5 dinner portions

1 shallot, chopped
1 tbsp butter
1 c cooked ham, chopped
1 c grape tomatoes, halved
1 ½ c sharp cheddar cheese, shredded
4 eggs, beaten
1 c milk
pinch of salt
¾ tsp pepper
¼ c parmesan cheese
1 9” unbaked pie shell

1. Sauté shallots over medium-low heat in 1 tbsp butter until soft
2. Add chopped ham to pan with shallots
3. When ham is slightly crispy and browned, add tomatoes and reduce heat to low
4. Meanwhile, in a medium bowl, beat eggs with milk, salt, and pepper
5. Add ham mixture and 1 ¼ c shredded cheddar cheese
6. Pour into pie shell
7. Sprinkle remaining ¼ c shredded cheddar cheese and ¼ c parmesan cheese on top
8. Bake at 350 degrees for 50 minutes or until set (center does not jiggle) and knife inserted in center comes out clean
9. Let stand for several minutes before serving

Pesto and White Wine Pasta with Ham, Carrots, Spinach, and Tomatoes

1 bag spinach
2 c baby carrots
2 c grape tomatoes, halved
2 c cooked ham, chopped
1 clove garlic
2 tbsp olive oil
¼ c water
6 tbsp pesto
¼ c dry, white wine
1 box pasta (rotini is nice)
Coarsely ground black pepper
Salt
Parmesan cheese

1. Cook pasta according to package directions
2. Meanwhile, in a small frying pan, sauté ham over medium-low heat until crispy and slightly browned. Reduce heat to low
3. In another large frying pan, sauté garlic in olive oil and black pepper over medium heat until fragrant. Add carrots and ¼ c water. Cover and “steam” for about 10 minutes until carrots are soft and slightly browned
4. Uncover carrots and add grape tomatoes and spinach. Add ¼ c white wine and sauté until spinach is wilted
5. Add pasta to large frying pan; reduce to low heat
6. Stir in ham to pasta
7. Stir in pesto and as much parmesan cheese as desired
8. Remove from heat and transfer to large bowl. Serve.

*Variations*
1. Add fried chicken tenders (about 3-4) into the pasta
2. Use pancetta or prosciutto instead of ham
3. Substitute in your favorite vegetables (bell peppers are always tasty!)
4. Omit the pesto, increase wine to ½ cup, and use feta cheese instead of
parmesan cheese

Bon Appetit’s Ham and Cheese Waffles

1 3/4 cups flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
3 large egg whites
3 large egg yolks
1 cup (2 sticks) melted butter
1 cup buttermilk
3/4 cup soda water
Non-stick vegetable oil spray
1 cup thinly-cut strips of ham
3/4 cup shredded sharp white cheddar
Maple syrup

1. Preheat oven to 300°. Heat waffle iron until very hot. Whisk flour, sugar, baking powder, baking soda, and kosher salt in a large bowl. Using an electric mixer, beat egg whites in a medium bowl until medium-soft peaks form. Whisk egg yolks, melted butter, buttermilk, and soda water in a medium bowl; gradually whisk into dry ingredients. Fold in egg whites.

2. Coat waffle iron with non-stick vegetable oil spray. Pour batter onto iron, spreading it into corners (amount of batter needed will vary according to machine). Scatter 1 rounded Tbsp. ham and 1 Tbsp. white cheddar over each waffle. Cook until golden brown and cooked through. Transfer to a baking sheet; keep waffles warm in oven between batches. Serve with butter and warm maple syrup.
