Summer Salad
As part of our latest edition of Bloggers’ Bites, Vatsala shares her favorite summer recipe.
My favorite summer recipe is my own creation, which I named the summer salad (creative, I know). Its blend of sweet and savory tastes makes this the perfect meal on a hot summer day along with a tall, cool glass of lemonade to wash it all down. Preparation takes about a half hour to forty-five minutes, but it’s definitely worth it in the end.
Summer Salad
Ingredients:
About a fourth of a lettuce head, chopped
7-8 brussels sprouts, chopped into fourths
A handful of cherries, chopped into halves
One green onion, chopped into small round pieces
One avocado, cut into small pieces
Half a fennel bulb, chopped
Grated parmesan cheese
Directions:
1) After chopping, put all the ingredients except for the brussels sprouts and the cherries in a bowl.
2) Retrieve a pan and put a little bit of olive oil in it. Start the gas and sauté both the brussels sprouts and the cherries.
3) After both have finished cooking, add them to the bowl as well. Mix thoroughly.
Dressing
Ingredients:
¼ cup of olive oil
1-½ tablespoons of fresh lemon juice
1 tablespoon of honey
½ teaspoon of chopped thyme
Salt and Pepper
Directions:
1) Blend all of these ingredients together and mix.
2) Top of your salad with this dressing and dig in!
