Just Mayo: Amazing New Vegan Mayonnaise

Vegans and non-vegans alike, rejoice!  Just Mayo is a new vegan mayonnaise that is amazing, because it tastes exactly like traditional mayonnaise, but it is made with only vegetable-based products. It has none of the saturated fat and cholesterol of conventional mayo, but it still manages to taste awesome.  Just Mayo is now offered at the market under 1920 Commons, Whole Foods, and Di Bruno Bros.

Hampton Creek Foods, which produces the product, is quite impressive. Its main goal is to make a “plant-based egg” to eliminate the environmental and ethical problems involved in chicken farming.  The company has been featured  in The New York Times, the Washington Post, TEDx, and many other well known media platforms. Bill Gates has called the company “the future of food.” The next product will be an egg-free cookie dough called “Eat The Dough”, so be sure to look out for it.

We decided to put this new mayonnaise to the test in several recipes, both savory and sweet.


These pita pockets are a quick and delicious vegan lunch.  If you have ever had Russian dressing (also known as Thousand Island), you know how universal it can be.  This salsa mayo is similar, but with anned added kick from the salsa’s spices.

Black Bean Patty Pita Pockets with Salsa Mayo

For pita pockets:

2 (14-ounce) cans black beans, rinsed and drained, divided
3 tablespoons Just Mayo
1/3 cup plain dry bread crumbs
2 teaspoons ground cumin
1 teaspoon dried oregano
1/4 teaspoon cayenne
3 tablespoons vegetable oil
Pita pockets
lettuce or other veggies

For salsa mayo:

¼ cup Just Mayo
2 tbsp jarred salsa

Pulse 1 can of black beans in a food processor with the Just Mayo, bread crumbs, cumin, oregano, and cayenne until you have a coarse purée. Transfer it to a bowl and stir in the remaining can of beans. Form the mixture into many small patties.

Heat oil in a 12-inch skillet over medium-high heat until it shimmers. Cook the patties until the outsides are crisp and lightly browned, turning once, about 5 minutes total. Make the salsa mayo by mixing the two ingredients together until well combined, adjusting for personal taste by either adding more salsa or more mayo.  Stuff the pita pockets with the patties and vegetables, then drizzle with the salsa mayo.  Enjoy!


If savory isn’t your style, try this delicious dessert.  The mayonnaise gives this cake a moist and tender crumb that contrasts wonderfully with its slightly crunchy sugary crust.

Citrus Cake With Lemon Glaze

For cake:

2 cups all-purpose flour
1 Tbsp. baking powder
1/4 tsp. baking soda
3 eggs
1 1/2 cups sugar
1 cup Just Mayo
1/4 cup sour cream
1 Tbsp. grated lemon peel
1 tsp. vanilla extract

For glaze:

powdered sugar
lemon juice

Preheat the oven to 350° and spray pan with nonstick cooking spray.

In a medium bowl, combine flour, baking powder and baking soda.

In large bowl, beat eggs with sugar until light and fluffy. Beat in Just Mayo, sour cream, lemon peel and vanilla, beat well. Then, beat in flour mixture just until blended. Spoon batter into prepared pan.

Bake for 35 minutes or until toothpick inserted in center comes out clean. While it bakes, make your lemon glaze by mixing lemon juice and powdered sugar until you get a thick glaze consistency.   Drizzle lemon glaze on top, and let cool 10 minutes.  Dig in!

  • Asparagus rolled in Just Mayo with Black Lava Cashews (Cashews roasted with Black Hawaiian Salt and Toffee)
